
We all know what a social media influencer is, and many companies use influencers to help promote their products. Here in Prince Albert, Harold’s Family Foods is very proud of their meat counter and the quality of meat they sell, so they wanted a famous local celebrity to talk about their meat. Unfortunately, everyone else was busy, so that’s when they contacted me…
Just call me… Lew Harrison – Meat-fluencer!
They started me off with a gorgeous rack of $5.99/lb pork baby back ribs and I couldn’t wait to get cooking. Now normally I just do BBQ ribs, slathered in BBQ sauce, but since it was a special occasion, I asked my listeners to send me their pork rib recipes, and they did not disappoint. I decided to go with baked then grilled Greek Ribs, since we’ve never done them before, and they were fall off the bone delicious!
For 2 racks of ribs (approx 3lbs)
1 cup olive oil
1 1/4 cup lemon juice
2 cups lemon zest
1/2 cup honey
2 tbsp minced garlic
2 tbsp Greek seasoning
4 tsp dried oregano
4 tsp dried parsley
4 tsp dried thyme
1/2 tsp kosher salt
1/2 tsp pepper
Make the marinade by combining those ingredients in a small bowl using a mini whisk and stir to combine.
Use a paper towel to pat the ribs dry, then use a butter knife to remove the membrane from the back side of the ribs. Once done, use a sharp knife to cut the rack into individual ribs. Place the ribs into large Ziploc bag (I used a freezer bag)
Pour the marinade into the bag and then seal the bag. Being careful to hold the bag shut, shake the bag until the marinade thoroughly covers the ribs. Place the bag in the fridge to marinate for at least three hours.
Pre-heat the over to to 250 degrees F.
Remove the ribs from the bag and place them in a roasting pan side by side. Cover them with the remaining marinade from the bag
Place the covered roasting pan in the oven and cook low & slow for an hour, then turn the ribs, and place back in the oven for another hour.
Remove from oven and place on BBQ at 350 degrees F and BBQ until you get a desired crispiness.
Eat and enjoy! We had ours with baby potatoes.
